This is one of the first layered cakes I ever made and is in my top 5 favorite cakes! This cake has the perfect balance of sweet and spice. It’s perfectly moist due to the combination of vegetable oil and apple sauce. We use freshly grated carrots, pecans and toasted coconut for some extra crunch. We love pairing this with our classic cream cheese frosting!
